Easy One Pot Chicken and Veggie Bake
@theallaroundmama makes weeknight dinners easy with this comforting One-Pot Chicken and Veggie Bake. Tender chicken, steamed veggies, and a creamy mushroom sauce come together over fluffy Success® Boil-in-Bag Jasmine Rice for a delicious, thorough meal.
Ingredients
- 1 cup lightly steamed broccoli
- 1 cup shredded chicken (cooked)
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 cup diced mushrooms
- 1 tbsp minced garlic
- 1 tbsp butter
- 1 cup cooked carrots (reserve ½ cup cooking liquid)
- ¼ cup soy sauce
- 2 bags Success® Boil-in-Bag Jasmine Rice (for 4 servings)
Instructions
- Microwave diced mushrooms with garlic and butter for 1 minute.
- In a large oven-safe pot, combine: lightly steamed broccoli, shredded chicken, cream of mushroom soup, cream of chicken soup, mushrooms, cooked carrots, soy sauce, and ½ cup carrot cooking liquid.
- Stir well, cover, and bake at 350°F for 45 minutes.
- Meanwhile, cook 2 bags of Success® Boil-in-Bag Jasmine Rice according to package directions.
- Serve the creamy chicken & veggie mixture over the rice.
